Anti-inflammatory Pumpkin Soup

The best EVER

  • Dice up a whole pumpkin, 2x zucchini’s, 2x carrots, 1x sweet potato, 1x white onion, 1x gralic

  • Boil 1xx container chicken or veg broth on stove top in pot with

  • Cook onion & garlic till lightly browned

  • Add onion & garlic + all diced veggies into boiling broth and let simmer for 15 mins or until veggies are soft

  • Add in collagen powder of your choice, turmeric, cumin, salt, pepper, chilli flakes

  • Use a hand-held mixer or blender to mix content’s into a soup consistency

  • Add 1x can coconut cream or milk. I prefer cream so the consistency is thicker! You can also use sour cream or any yoghurt alternative of your preference.

  • Serve with fresh parsley and coconut cream and a freshly buttered piece of sourdough or 4
