Anti-inflammatory Pumpkin Soup
The best EVER
Dice up a whole pumpkin, 2x zucchini’s, 2x carrots, 1x sweet potato, 1x white onion, 1x gralic
Boil 1xx container chicken or veg broth on stove top in pot with
Cook onion & garlic till lightly browned
Add onion & garlic + all diced veggies into boiling broth and let simmer for 15 mins or until veggies are soft
Add in collagen powder of your choice, turmeric, cumin, salt, pepper, chilli flakes
Use a hand-held mixer or blender to mix content’s into a soup consistency
Add 1x can coconut cream or milk. I prefer cream so the consistency is thicker! You can also use sour cream or any yoghurt alternative of your preference.
Serve with fresh parsley and coconut cream and a freshly buttered piece of sourdough or 4
